At Trattoria Da Vildo we try to offer the best of Tuscan cuisine by combining tradition and innovation, using only rigorously fresh and local ingredients. To make your Maremman culinary experience start off in the best possible way, our menu offers a wide selection of cold cuts and cheeses from the region and various ypes of bruschette (toasted bread dressed with our special extra-virgin olive oil, fresh tomatoes, ushrooms and other in-season vegetables). Home-made pasta plays a major role in our menu. In ddition to traditional pasta dishes, such as tagliatelle (long, flat ribbons of pasta), pici (thick, hand-rolled spaghetti), gnocchi (thick, soft dough dumplings made from potatoes) and tortelli (ravioli stuffed with fresh ricotta cheese and spinach), we also prepare more creative versions of classic recipes, such as chestnuts-filled tortelli, apples-filled tortelli and potatoes tortelli. In our menu you can also find another Tuscan classic: acquacotta, an onion, celery and basil soup served with a base of bread crumbs and a poached egg on top. Among the second courses, you can choose between four different versions of wild boar meat, a type of meat that is very famous and appreciated in the region. Our menu also offers roasted and fried chicken, rabbit, guinea fowl, duck or our famous Noemi’s tripe. A special attention is devoted to vegetarian clients, who can choose among a wide selection of dishes: fried zucchini blossoms, fried mushrooms and vegetables flans are just some examples. Since every respectable culinary journey must have a sweet ending, we offer a wide choice of daily home-made dessert. You would not want to leave without tasting one of Marcella’s delicious cakes or our home-made cantuccini (typical almond biscotti traditionally served with a glass of vin santo, a local digestive liqueur).
